Mango Butter With Pepper (Butter from a Cow)

Ingredients
- 1 lb butter
- 1 3⁄4 cups mangoes, 1/4 inch dice (barely ripe)
- 1⁄4 cup green onion, fine dice
- 1⁄4 cup black pepper, fresh ground
Directions
- Whip butter to soft texture.
- Fold in everything else.
- Roll to 1 3/4" rolls in wax or parchment paper.
- Refrigerate at least 1 1/2 hours before using.
