Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 1⁄4 cups sugar
- 1⁄2 cup shredded coconut
- 1⁄2 cup chopped nuts
- 2 cups chopped mangoes
- 3⁄4 cup oil
- 3 eggs, beaten
- 2 teaspoons vanilla
Directions
- Preheat oven to 350°F Grease a 9x5x3-inch loaf pan.
- Sift flour with baking soda and cinnamon into mixing bowl. Stir in sugar, coconut and nuts.
- Add remaining ingredients and mix well.
- Pour into prepared pan and bake for 1 hour and 15 minutes or until done.
