Mango Black Bean Pizza

Yields: 1 pizza

Ingredients

  • 1  prepared pizza crust
  • 34 cup salsa (if the salsa is chunky, you may need a full cup)
  • 34 cup  shredded  Mexican blend cheese (plus more to taste)
  • 12 cup  thinly sliced zucchini
  • 12 cup  sliced mango
  • 14 cup canned black beans, rinsed
  • 1  green onion, sliced
  • 14 cup cilantro leaf

Directions

  1. Preheat oven to temperature indicated on pizza crust package. Bake crust for 5-8 minutes.
  2. Spread salsa onto the crust, leaving a 1-inch border on all sides. Top with cheese, zucchini, mango and beans. Top with more cheese to your liking.
  3. Bake according to crust instructions (usually 12-15 minutes); top with green onions and cilantro prior to serving.
