Mandarin Spinach Salad

Ingredients
Dressing
- 2 tablespoons vegetable oil
- 1 tablespoon rice vinegar
- 1 teaspoon grainy mustard
- 1 pinch salt
- 1 pinch ground black pepper
Salad
- 4 cups baby spinach leaves
- 1⁄2 cup bean sprouts
- 1⁄4 cup almonds, sliced (optional)
- 3 radishes, thinly sliced
- 1 green onion, sliced
- 1 (284 ml) can mandarin orange sections, drained and patted dry
Directions
- In a large bowl, whisk together the oil, vinegar, mustard, salt and pepper.
- Add the spinach, bean sprouts, almonds (if using), radishes, green onion and oranges.
- Toss to combine.
