Mama's Meatloaf Shared by Mammie

My mother (from Arkansas) was an excellent cook, Everyone that ate her food made that statement. I have made this myself for over 40 years & everyone gobbles it up. Please try it first without changing ingredients. Then if you like switch it around to suit your taste. People that don't care for bell peppers even love this. I like to have mashed potatoes & gravy made from the drippings with it. If there's leftovers it makes great sandwiches. Show more

Serves: 4-6

Ingredients

  • 2  lbs  ground chuck
  • 12 lb sausage
  • 2  eggs, lightly beaten
  • 1 (1 ounce) package  Lipton Onion Soup Mix
  • 1  large bell pepper, diced
  • 1 (8 ounce) can tomato sauce, divided
  • 1 12 cups water
  • 13-12 cup quick-cooking oats
  • 2  teasp.  beef bouillon (I prefer Better Than Bullion)

Directions

  1. Place meats in large bowl.
  2. Add eggs, soup mix & bell pepper.
  3. Add 1/2 ( 4 oz) of tomato sauce.
  4. Add 1/3 cup oats.
  5. Mix all together but don't over mix or it will be too tight.
  6. Pick up in your hands & if you can form it into an oval loaf & it feels stable place in roasting pan large enough to leave space around loaf. If it doesn't feel stable add more oats & mix into meat mixture. After it is placed in roasting pan add 1/2 cup water to remaining tomato sauce & stir to blend & pour over meatloaf. pour remaining water & Beef bullion around loaf.
  7. Cover and Bake in 350 degree preheated oven for 90 minutes.
  8. Enjoy!
