Mallory Mashers/Cauliflower

Ingredients
- 1 head cauliflower
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons light sour cream
- salt
Directions
- Cut cauliflower into chunks and steam or boil until until it is very, very soft.
- Drain water.
- Use a potato masher to mash the cauliflower until it is fairly smooth (You can use a blender or food processor to get a very smooth result, but I like to keep a little texture).
- Add cheese, sour cream, and salt to taste.
