Mallory Mashers/Cauliflower

A restaurant near my house started serving this, and it was so yummy, I had to ask what was in it! This makes a great veggie side, and with the cheese, kids will eat it without asking questions. Depending on your taste, you can use regular sour cream, light sour cream, or butter. Show more

Directions

  1. Cut cauliflower into chunks and steam or boil until until it is very, very soft.
  2. Drain water.
  3. Use a potato masher to mash the cauliflower until it is fairly smooth (You can use a blender or food processor to get a very smooth result, but I like to keep a little texture).
  4. Add cheese, sour cream, and salt to taste.
