Madagascar Avocado Dip

Yields: 1 quart
Ingredients
- 4 avocado pears, soft cut into small pieces and mashed smooth
- 4 tablespoons lemon juice
- 2 1⁄2 ounces anchovy fillets, cut into 1/2 inch pieces
- 1 cup white onion, chopped finely
- 1 teaspoon crushed red pepper flakes
- 1⁄2 teaspoon garlic powder
- 1⁄2 cup sweet sherry
Directions
- Blend avocado and lemon juice. Add anchovy, onion, red peppers and garlic powder.
- Mix in a food processor or chop finely.
- Add sweet sherry.
- Cover the bowl and chill until ready to serve.
- Serve with sesame crackers.
- To serve as an appetizer arrange on lettuce cup and garnish with thin onion slices and tomato wedges with sesame crackers.
