Macadamia-Crusted Tilapia With Pineapple Salsa

Ingredients
For fish
- 1⁄2 cup flour
- 1 egg, lightly beaten
- 1 cup crushed macadamia nuts
- 4 tilapia fillets
For salsa
- 1 cup fresh pineapple, finely chopped
- 1 tablespoon red onion, minced
- 1⁄2 jalapeno, minced
- 1⁄4 cup cilantro, minced (1/4 c BEFORE mincing)
Directions
- Preheat oven to 400 degrees. Dredge fish in flour, then egg, then nuts. Place on oiled baking sheet. Bake 20 minutes until golden brown.
- Make the salsa as far ahead as possible to allow time for flavors to meld. Combine all salsa ingredients and refrigerate. Serve over fish.
