Lynn's Versatile Bran Muffins

This recipe is easy, quick & tasty.....Oh ya Healthy too!!!!!

Serves: 12-18

Yields: 12-18 Muffins

Ingredients

  • 14 cup shortening or 14 cup butter or 14 cup  oil
  • 12 cup  firmly packed brown sugar
  • 14 cup molasses (I use a bit more)
  • 2  eggs
  • 1  cup milk (I use soya milk)
  • 1  cup flour (I use whole wheat flour)
  • 1 12 teaspoons baking powder
  • 12 teaspoon baking soda
  • 34 teaspoon salt (I use 1/4)
  • 1 12 cups  wheat bran (I use a mixtrue of wheat & oat bran)
  • 34 cup raisins (any fruit "or" fruit & nut mixture ( I like blueberry & cranberry)

Directions

  1. Cream shortening ans sugar.
  2. Add molasses ans eggs and beat.
  3. Add milk then bran.
  4. Combine flour, baking powder, soda& salt.
  5. Add to liquid ingredients then add fruit.
  6. Or be like me and put everything in one bowl& mix.
  7. Bake at 400 degrees for about 18-20 minutes.
  8. Makes 12 large, 15 medium 0r 18 small.
