Lowfat Light As Air Peppermint Mernigues

Ingredients
- 2 egg whites
- 1⁄2 teaspoon vanilla
- 1⁄8 teaspoon cream of tartar
- 2⁄3 cup sugar
- 1⁄4 cup finely crushed peppermint candy
Directions
- place egg whites in a mixing bowl and let sit for 1 hour.
- add vanilla and cream of tartar to egg whites.
- beat with an electric mixer until soft peaks form.
- add sugar 1 tablespoon at a time.
- beat until stiff peaks form.
- grease a cookie sheet and sert aside.
- gently fold crushed candies into beaten egg whites.
- drop from a rounded teaspoon 1 1/2 inches apart.
- bake at 325 ten minutes.
- cool and then store in airtight container.
