Lowest Calorie Chocolate Sponge

Ingredients
- 8 tablespoons Splenda granular
- 2 eggs
- 100 g diet cola
- 50 g self raising flour
- 50 g cocoa powder
Directions
- Pre-heat the oven to gas mark 5.
- First mix the splenda, eggs, and diet cola with an electric whisk till it's well mixed and a bit frothy.
- Then sift the flour and cocoa powder into the wet ingredients.
- Fold together gently with a spatula, so as not to knock out all the air, or over-stretch the gluten in the flour.
- Pop this mixture into a lined 7in diameter tin, and bake for 30 minutes.
- Leave to cool in the tin for 10 minutes, then turn out onto a cooling rack to finish cooling.
