Lower Fat Banana Nut Chip Muffins

Based on Recipe Nut's Banana Nut Chip Muffins I am posting the healthier changes I made to try and make it more lunchbox friendly. This is what I used because of what I had. I'd like to try with splenda and egg whites. I have very small old muffin tins, you may not get as many muffins as I did. Show more

  1. Preheat the oven to 400 degrees and spray the muffin tin with cooking spray.
  2. Place the applesauce and sugar into a mixing bowl. Using an electric mixer, beat until fluffy.
  3. Add your eggs, beating after each one. Then add the mashed banana and beat well.
  4. Add one cup of the flour, the salt, the baking powder and baking soda, and mix. Pour in about half the milk and mix.
  5. Now add the additional 1 cup of flour and the rest of the milk and mix.
  6. Using a wooden spoon add the vanilla, pecans, and chocolate chips. Mix just until moist.
  7. Pour into your muffin tins and bake for 13-18 minutes or until just browned. Let cool on a wire rack.
