Low Sodium Mini-Meatballs and Sauce for Kids

My son's going through a meatball phase, but I don't like all the salt and corn syrup in the canned kind. This sauce is no-salt-added, and has a touch of cane sugar to help the taste. I boil the meatballs in salt-free homemade chicken stock, but you can use plain water, too. Tasty for adults, too! Just edit spices as needed, too. I put minimum amounts for small children.   1. Process oatmeal until coarse powder (like dried breadcrumbs).
  2. Remove from processor.
  3. Place turkey, eggs, onion, spices and ground oatmeal into processor, and with metal blade, process until blended.
  4. Mixture should be firm enough to roll into balls.
  5. In a large saucepan, bring broth to simmer. Add water as needed to accommodate all meatballs.
  6. Roll meat into small balls (1 inch in diameter) and drop into broth, and cook for 10 minutes or until done.
  7. For sauce, mix tomato paste and water with a whisk until blended.
  8. Add all other ingredients and mix.
  9. Heat through, and serve with meatballs and pasta.
