Low Fat Yellow Squash Bake

This is my version of a slim down Squash Casserole!! Very Good!!

Serves: 4

Ingredients

  • 3 -4  cups squash
  • 1  onion, diced
  • 12 cup milk (eyeballed for consistency)
  • 10 (1/2ounce) cans  cream of broccoli soup
  • 12-1  cup  breadcrumbs
  • 12 cup cheddar cheese
  •  cajun seasoning
  •  pepper

Directions

  1. cook squash and onion in about a tablespoon of butter with seasonings.
  2. when done lightly mash mixture.
  3. combine milk and soup mix well and add squash mixture.
  4. put in a baking dish and layer breadcrumbs then cheese.
  5. cook in 350 degree oven for 10-15 minutes.
