Low-Fat Rice Pudding

Ingredients
- 1 cup medium grain rice
- 2 liters 1% low-fat milk
- 2⁄3 cup sugar
- 2 teaspoons vanilla
Directions
- combine milk and rice in a large pot.
- turn on medium burner.
- cook for 1 hour.
- when its 2/3 to 3/4 done, add sugar.
- after it has cooked for 1 hour, add vanilla.
- while cooking, stir occasionally, especially towards the end.
- all done!
- note: i sprinkle a small amount of sugar into the milk and rice.
