Low Fat Refried Beans

Ingredients
- 1 cup pinto beans
- 1 tablespoon extra virgin olive oil
- 3 garlic cloves
- 1 onion
- salt & pepper
Directions
- Put the pintos in a pan with water to cover.
- Bring to a boil, let boil 3 minutes.
- Turn off the heat and let stand forat least 45 minutes.
- Drain and refill pan with water to cover.
- Boil 30 minutes or till tender.
- Meanwhile, chop onions and garlic (I use a food processor, so it's really fast).
- Saute onions and garlic in olive oil.
- Put pintos and onions and garlic into food processor to mash.
