Low-Fat Orange Oaties

This recipe came out of the "The New Cookie Book". These are great and perfect. They are so delicious that it is difficult to believe that they are healthy too. They are packed with flavour and wonderfully crunchy. Show more

  1. Preheat oven to 350 degrees.
  2. Line two baking sheets with parchment paper.
  3. Put the honey and orange juice in a small pan and simmer over a low heat for 8 - 10 minutes, stirring occasionally, until the mixture is thick and syrupy.
  4. Put the oats, flour, sugar and orange rind into a bowl. Mix the baking soda with 1 tbsp boiling water and add to the flour mixture, together with the honey and orange syrup. Mix well with a wooden spoon.
  5. Place spoonfuls of the mixture on to the prepared baking sheets, spaced slightly apart and bake for 10 - 12 minutes or until golden brown. Leave to cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.
