Low-Fat Ham and Sour Cream Pasta

Ingredients
- 7 1⁄2 ounces dried bow tie pasta
- 2 (8 ounce) containers light sour cream
- 1 (12 ounce) container fat-free cottage cheese
- 1 tablespoon flour
- 3⁄4 cup 2% low-fat milk
- 2 eggs or 1⁄2 cup egg substitute
- 2 cups cubed lean ham
- 1⁄2 cup red bell pepper, chopped
- 1⁄2 cup finely chopped celery
- 1 tablespoon minced onion
Directions
- Cook pasta in boiling water as directed on package. Drain. Meanwhile, heat oven to 325 degrees. Spray a 13x9 casserole dish with nonstick cooking spray.
- In blender container, combine sour cream, cottage cheese, flour, milk, and eggs; blend well. In a large bowl, mix ham, bell pepper, celery and onion. Add the sour cream mixture and pasta to bowl and mix well. Pour into sprayed casserole. Spray a sheet of foil with cooking spray and cover baking dish.
- Bake 50-60 minutes or until thoroughly heated. Stir before serving.
