Low Fat Crockpot Apple Rings

Sweet & cinnamon-y! I concocted this recipe when I wanted cooked apples but needed to do dinner prep ahead of time. And I didn't want a large amount of 'sauce', and didn't want butter in it! *Don't overcook this- the liquid will disappear and the apples will turn to mush. Keep an eye on it the first time you make it and record the cooking time! Show more

  1. Combine all ingredients except apples in a small bowl; the mixture will be thick, without much liquid.
  2. Core apples, peel, and slice into rings.
  3. Place about a third of the apples into a small, 3 quart crockpot, and top with about a third of the coconut mixture. Repeat layers.
  4. Cook, covered, on low setting for about 2 1/2 hours. Stir once. (There will not be a lot of goopy sauce; just enough to flavor every apple slice!).
  5. Serve warm!
