Low Fat Cheese Sauce

Ingredients
- 2 tablespoons flour
- 1 1⁄2 cups milk
- 1⁄2 cup egg substitute
- 16 ounces cottage cheese
- 1⁄4 teaspoon nutmeg
- salt and pepper
Directions
- Place flour in medium saucepan. Gradually stir in milk until smooth.
- Cook over medium low heat, stirring often until mixture boils and thickens slightly, about 5 minutes.
- Sieve cottage cheese into a medium bowl. Beat in egg substitute until well blended. Stir into cooled milk sauce. Season to taste with nutmeg, salt and pepper.
