Low Fat Beef Barley Soup

Ingredients
- 1 tablespoon vegetable oil
- 1 lb lean stewing beef, diced into small pieces
- 1 tablespoon flour
- 32 ounces fat-free beef stock (usually boxed)
- 1 carrot, diced
- 1 medium onion, diced
- 1 stalk celery, diced
- 3⁄4 cup pearl barley
- 1⁄2 teaspoon thyme
- 1 (14 1/2ounce) can diced tomatoes
Directions
- Add oil into skillet.
- Sear diced meat in pan.
- Add flour to pan and stir for 1 minute.
- Add beef stock to pan and stir.
- Add remainder of ingredients.
- Simmer 1-2 hours until barley is softened.
