Low Fat Apple and Cinnamon Muffins

  1. Preheat oven to 180 Degrees Celsius.
  2. Lightly grease 12-hole muffin pan.
  3. Sift flour and cinnamon into a bowl.
  4. Stir in brown sugar, sultanas and apple.
  5. Make a well in centre.
  6. Whisk together margarine, milk, egg and vanilla.
  7. Pour into flour and mix with a fork. Stir until just combined don't overbeat.
  8. Spoon mixture into prepared pan and bake for 20 minutes.
  9. Leave in pan for a few minutes to cool and then remove onto wire rack.
