Low Carb Smoked Gouda and Cabbage

Ingredients
- 1⁄4 cup wild rice, uncooked
- 4 tablespoons extra virgin olive oil
- 2 lbs cabbage, sliced thin
- 2 cups smoked gouda cheese, shredded
- 2 cups craisins, chopped into smaller bits
- 1 cup almonds, slivered
- 1 teaspoon salt, to taste
- 1 teaspoon pepper, to taste
Directions
- Preheat oven to 350°F.
- Prepare rice according to package directions.
- On large sheet pan, spread out cabbage and spray with oil, salt and pepper to taste. Change oven to broil, and place cabbage under broiler at medium distance until tender and lightly browned, 8-10 minutes.
- In a bowl, stir cooked rice, cabbage, craisins, and almonds. Set aside and let it cool to room temperature.
- Now add cheese and stir until everything is nicely mixed. Season with more salt and pepper, if needed.
- Serve right away, 3/4 cup per person.
