Low Carb Peanut Butter Cookies

Ingredients
- 1⁄2 cup brown Sugar Twin
- 1⁄2 cup Splenda sugar substitute
- 1⁄2 cup butter, softened
- 3⁄4 cup peanut butter, chunky
- 1 large egg
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄2 cup almond flour
- 1⁄2 cup Atkins baking mix
- 1⁄2 cup oat flour
- 2 teaspoons vital wheat gluten
Directions
- Blend sweeteners, butter and egg until smooth; add peanut butter and mix.
- Add dry ingredients and mix until well blended.
- Form into balls, and press with fork.
- Bake 375° for 12-15 minutes or until just browned.
