Low Carb/No Grain Cereal

Ingredients
- 2 cups chopped pecans
- 1 cup sliced almonds
- 1 cup shelled raw sunflower seeds
- 1 cup raw shelled pumpkin seeds
- 1⁄2 cup flax seed
- 4 egg whites
- 1⁄4 teaspoon stevia powder (or more to taste)
- 3 teaspoons pumpkin pie spice or 3 teaspoons ground cinnamon
- 3 teaspoons vanilla
Directions
- 1.Beat eggs whites until soft peaks form.
- 2.Add stevia, pumpkin pie spice and vanilla.
- 3.Add nuts to egg white mixture and mix well. Taste for sweetness.
- 4.Line a cookie sheet with parchment paper.(do not use wax paper!).
- 5.spread granola evenly over parchment paper with spatula.
- 6.Bake in a preheated oven just below 225 degrees.
- 7.Cook for 80 minutes,stirring/breaking up every 20 minutes(set a timer).
- 8.Then you can turn off oven and leave for 1 hour or longer to continue to dehydrate.
- 9.Remove and allow to cool.Crumble/ break up with clean hands before placing in an air tight container.
- 10.Makes about 8 cups(serving is 1/2 cup).
