Low-Calorie Pizza-Inspired Warm Spinach Salad

A low-calorie solution for when you're craving pizza or lasagna. I might go as far as to say I find this more satisfying than either of those dishes because it keeps the good stuff (melty goey cheese and Italian spices) without bothering with the boring crust or pasta. [Notes:] *I use fat-free Swiss cheese slices; their flavor is mild and not very Swiss-y, so when combined with the other flavors it tastes close enough to ordinary Mozzarella cheese. It can be found in most stores near the American cheese "singles" sandwich slices. *If you have the time, leave the cheese out at room temperature for an hour before making the salad. This way, when you microwave the salad, the cheese will get really melty without having to over-microwave the spinach. The spinach should be warmed and slightly wilted but nowhere near thoroughly cooked. *food.com's nutrition analysis is incorrect, because they're assuming this recipe uses some sort of full-fat cheese. With fat-free cheese, this comes out to about 130 calories [90 calories from the cheese, 20 calories pizza sauce, 20 calories spinach.] A plate-full of Italian comfort food at only 130 calories!   1. Toss together spinach and sauce.
  2. Tear cheese into 3/4" pieces.
  3. Sprinkle cheese and Italian seasoning over spinach.
  4. Toss again.
  5. Microwave aproximately 30 to 45 seconds.
