Low-Cal Citrus Baked Pork

I saw this in a summer cookbook and had to try it--it is really yummy.

  1. Preheat the oven to 200°C.
  2. Heat 1 tbsp olive oil in a large frying pan.
  3. Cook the pork steaks in batches over a high heat for 1 minute on each side until lightly browned.
  4. Remove from frying pan.
  5. Drain on kitchen paper.
  6. Arrange pork steaks, lemon and lime slices and thyme leaves in a shallow, ovenproof dish.
  7. Drizzle the remaining olive oil, season generously.
  8. Mix the white wine and stock.
  9. Pour into the dish.
  10. Bake uncovered for 20-25 minutes.
  11. When the pork is tender and cooked through.
  12. Serve with mashed potatoes and seasonal vegetables, or salad if preferred.
