Lots of Tomatoes Beef Stew

Ingredients
- 2 lbs extra-lean beef stew meat, trimmed of fat
- 5 -6 carrots, cut into 1 inch pieces
- 1 large onion, cut in chunks
- 3 celery ribs, sliced
- 6 medium tomatoes, cut up and gently mashed
- 1⁄2 cup cups quick-cooking tapioca
- 1⁄2 teaspoon ground cloves
- 1 teaspoon basil
- 1⁄2 teaspoon dried oregano
- 2 bay leaves
- 2 teaspoons salt
- 1⁄2 teaspoon black pepper
- 4 potatoes, cubed
Directions
- Place all ingredients in a slow cooker, and mix together well.
- Cover, and cook on high 5 1/2- 6 hours.
- If juices are too thin, add 2-3 tablespoons instant mashed potatoes.
