Lori's Pulled Pork - Crockpot Style

The sauce is tangy, sweet and with a bit of a bite, the meat is cooked to perfection!

  1. chop onion into large chunks, using 2/3 of the onion on the bottom of the crock pot.
  2. place roast into crock pot.
  3. pour in beer or ale (again, I prefer Kilt Lifter).
  4. Place remaining 1/3 onion on top of pork roast.
  5. Cook on "LOW" for 8 hours -- if your crock pot runs hot, only cook initially for 6 or 7 hours.
  6. Meanwhile:
  7. chop large white onion into small pieces and place in medium sauce pan.
  8. Add salt, brown sugar, pepper, paprika, white vinegar and tomato sauce.
  9. Cook on low for 40 minutes or until onions are beginning to vanish. Cool and store for use on pork.
  10. When pork has cooked for 6 to 8 hours (depending on crock pot cooking temps), remove pork.
  11. Place onion in bowl, reserve for later.
  12. Pour remaining liquid (which will have all the excess fat in it, away and dispose of 2/3 or the liquid -- retain 1/3 for later.
  13. Using 2 forks, shred the pork.
  14. Return the pork, the 1/3 liquid and onions to the pot and cook another 3 hours - ON LOW!
  15. Add the saved sauce and turn to high for 35 minutes.
  16. Serve on buns, rice or whatever you prefer!
