Lori's Porc Vanille

Good little pork recipe. Fancy enough for a dinner party, yet very homey...

  1. Dissolve the water, salt and sugar very well.
  2. Add the seeds, bay leaves, parsley, thyme and peppercorns. Mix well.
  3. Add pork. Cover. Chill in brine for 24 hours, turning often.
  4. Heat oven 375.
  5. Drain pork. Rub with vanilla seeds.
  6. Heat oil in a dutch oven.
  7. Add pork. Sear on all sides. Place in oven.
  8. Roast 1/2-2 hours, basting often, or until internal temperature reaches 140.
  9. Remove. Let stand 10 minutes. Slice.
  10. Serve with pan juices.
