Lori's Fish With Bean Puree

Ingredients
- 1 cup dried white bean
- 1 tablespoon olive oil
- 1 garlic clove (minced)
- 1 shallot (minced)
- 1 teaspoon thyme (minced)
- 2 anchovies (rinsed, minced)
- 1⁄2 cup fish stock
- 1 lb fish fillet (any white, in chunks)
- 1 cup seasoned flour
- 1⁄4 cup olive oil
- 1 green onion (minced)
- fresh thyme sprig
Directions
- Soak beans 8 hours.
- Drain. Place in a pot. Cover with water. Bring to a boil. Reduce. Cover. Simmer 1 hour. Drain.
- In a skillet heat oil.
- Add the garlic, shallots, thyme and anchovies. Saute 3 minutes.
- Add broth and beans. Saute 3 more minutes.
- Puree. Place in a saucepan.
- Clean out skillet.
- Dredge fish in flour to coat.
- Heat oil in skillet.
- Add fish. Saute until golden on both sides (sbout 3 minutes each).
- Re-heat puree. Place on plates. Top with fish. Garnish with onions and thyme.
