Lori's Cod Bake

Serves: 6-8
Ingredients
- 2 lbs cod fish fillets
- 1 bay leaf
- white wine, as needed
- 1⁄2 bunch collard greens (shredded)
- 8 potatoes (peeled, sliced thin)
- 1⁄2 cup olive oil
- 4 large onions (sliced thin)
- 3 tomatoes (chopped)
- salt & fresh ground pepper (to taste)
- 1⁄2 cup olive oil
Directions
- Heat oven 350.
- Place cod in a deep skillet.
- Ad bay leaf. Cover with wine. Poach cod until just cooked. Drain. Flake. Set aside.
- Boil potatoes and greens until tender. Drain.
- Heat oil in a skillet.
- Add onions. Saute 10 minutes or until golden.
- Add tomatoes. Saute 5 minutes. Season.
- In a sprayed 9x13 baking dish, layer the potato mix, cod, and onion mix in 2 layers.
- Pour oil over top.
- Bake 1 hour.
