Lobster With Mimosa Dressing

Nothing is better than lobster for a special meal (well for me anyways) . We made these for our anniversary and just loved the combination of flavors. Preparation/cooking time does not include 2 hours to chill the lobster, so dont forget to allow time for that. Show more

  1. Split each tail lengthwise and rinse with cold water.
  2. Place, meat side up, on a foil-lined baking pan.
  3. Lightly brush each tail with melted butter and sprinkle lightly with salt and pepper. Broil about 4 inches from heat for about 4 to 6 minutes, or until tails curl.
  4. Remove from the oven and let cool.
  5. Cover and chill for an hour or two.
  6. Mimosa Dressing:.
  7. Combine honey, orange juice concentrate, and champagne vinegar in a medium saucepan.
  8. Simmer for 5 minutes, or until slightly reduced.
  9. Add salt and pepper to taste.
  10. Arrange lobster tails on a plate with a few greens, sliced radish, or other salad vegetables.
  11. Drizzle a little of the Mimosa Dressing near the lobster.
