Loaded Baked Potato Soup

Takes me back to the Renaissance :) SUPER easy!

  1. Cook bacon and Dice potatoes to uniform size and place in large boiling pot.
  2. Fill water to half an inch above the "potato line" bring to rolling boil. Set bacon aside to cool and harden.
  3. When potatoes are soft, mash them. Season to taste.
  4. Add cheese and milk. Don't be afraid to double down on cheese. Keep stirring after this or cheese may settle and cook to the bottom.
  5. If needed, slowly stir in flour to thicken.
  6. Serve into bowls and garnish with sour cream, chopped onions and crushed bacon :).
