Lively Lentils

Lentils are such a good-for-you food, and served over brown rice, make a complete meal. This recipe is a combination of several, and has a wonderful sweet and spicy flavor. Add water if they become too thick. Leftovers can be frozen. Show more

Directions

  1. Bring lentils to a boil in the water and simmer 25 minutes.
  2. In a skillet, saute onion and green pepper in oil until soft.
  3. Add to lentils, along with all other ingredients.
  4. Simmer an additional 20 minutes until lentils are cooked, but not mushy.
