Little Sister's Southern Meatloaf

ALA. & ARK. Roots, Family of 6 kids, Big, Middle, and Little Sister. "La" would be 98ish today and baked her loaf in a cast iron skillet which added texture and flavor galore to a moist loaf. She served with mashed potatoes, fresh Kentucky Wonder greenbeans, sliced tomatoes & cornbread. Hats off to you, La! Show more

Directions

  1. Preheat oven to 350 degrees.
  2. Mix loaf ingredients in large mixing bowl until well blended. (I use my hands).
  3. Place in ungreased baking pan large enough to accommodate 1 cup sauce to be poured over loaf and run down sides. TRY YOUR CAST IRON SKILLET!
  4. Take rounded end of wooden spoon (a fork will work) and poke holes 1" deep for sauce to run into for added flavor throughout. Set loaf aside.
  5. Combine sauce ingredients in small pot and mix over medium heat until well blended. (In a hurry, whisk ingredients well by-passing pot over heat).
  6. Slowly pour sauce over loaf in pan.
  7. Bake at 350 for 45-50 minutes.
