Little Chocolate Bourbon Low Carb Cheesecakes

Ingredients
- 3 (8 ounce) packages cream cheese
- 3 eggs
- 1⁄2 cup carbalose flour
- 1⁄4 teaspoon salt
- 3 ounces unsweetened chocolate
- 2⁄3 cup Splenda sugar substitute
- 2 tablespoons Bourbon or 2 tablespoons vanilla, to taste
Directions
- Melt the chocolate.
- In a mixer or food processor, beat the eggs into the cream cheese and add the rest of the ingredients.
- Sweeten to taste and add your favorite flavoring to taste.
- Spray cupcake papers with non-stick spray and place in muffin tins.
- Fill cupcake papers 3/4 full.
- Bake at 350 degrees for 12-14 minutes.
- Chill or freeze when cooled.
