Little Applesauce Muffins

Great little muffins to make any time of year.

  1. Preheat oven to 425­ degrees.
  2. In large bowl, cream soft butter and sugar, until fluffy.
  3. Beat in eggs, one at a time until light and fluffy.
  4. Beat in applesauce.
  5. In separate bowl, stir together flour, baking powder, and salt.
  6. Add to butter mixture.
  7. Stir to moisten.
  8. Spoon into 36 greased tea-size (about 1 ¾ in diameter) muffin cups.
  9. Bake in preheated oven about 15 minutes (check at 12 minutes) until golden brown.
  10. When taking muffins out of the oven, turn pans upside down on a kitchen towel.
  11. Tap down.
  12. The muffins will fall out.
  13. While warm, dip tops of muffins into melted butter, then cinnamon/sugar mix.
  14. Cool.
  15. Variations - add mini chocolate morsels, chopped nuts, or cranberries.
