Linguine With Spicy Clam Sauce

Ingredients

  • 14 cup olive oil
  • 1 12 cups  chopped onions
  • 1  tablespoon  chopped garlic
  • 1  tablespoon  chopped jalapeno  chili
  • 1  teaspoon dried oregano
  • 3 (6 1/2ounce) cans  chopped clams
  • 12 cup  whipping cream
  • 12  ounces linguine, freshly cooked
  • 6  tablespoons  chopped fresh basil

Directions

  1. Heat oil in heavy large pot over medium heat.
  2. Add onion, garlic, chili and oregano to skillet.
  3. Saute until onion is tender, about 6 minutes.
  4. Add clams with their juices and cream.
  5. Simmer until sauce thickens slightly, about 4 minutes.
  6. Add pasta and 4 tablespoons basil; toss until sauce coats pasta, about 2 minutes.
  7. Season with salt and pepper.
  8. Transfer pasta to large bowl.
  9. Sprinkle with remaining basil.
