Lina's Lumpia

Ingredients
- 2 lbs ground pork
- 1 lb ground beef
- 1 onion, finely chopped
- 1 bunch scallion, finely chopped
- 1 tablespoon garlic, finely chopped
- salt and pepper
- 1 carrot, finely shredded
- 4 -5 eggs
- cilantro, chopped
- wonton wrapper
Directions
- Mix all ingredients adding one egg at a time until the consistency of meatloaf. Using wonton wrappers of your choice, place a small amount of the meat on the wrapper and roll per instructions with the wrappers. Fry in hot oil until done, golden brown.
- Variation - you may add water chestnuts, celery or soy sauce to the meat mixture if you choose.
