Lime Syrup

• Serves: 4

Ingredients

• 1  cup caster sugar
• 8  cardamom pods, green, seeds removed and crushed
• 3⁄4 cup water
• 3⁄4 cup lime juice
• 1  tablespoon lime zest

Directions

1. Put the caster sugar, cardamom pods and water in pan. Stir over a gentle heat until the sugar has dissolved.
2. Take off the heat and allow to cool before adding the lime zest.
