  1. In medium saucepan over medium heat, bring the water, sugar, and lime juice to a simmer.
  2. Cover the pan, lower the heat slightly, and cook for about 3 minutes, until the sugar is dissolved.
  3. Remove from the heat and cool the mixture to room temperature.
  4. Stir in the lime zest.
  5. Chill the mixture for 2 hours.
  6. Freeze in an ice cream maker according to the manufacturer’s instructions.
