Lime-Cilantro Dressing

From "Mexican Everyday" by Rick Bayless. This is a wonderful light, flavorful dressing.

Yields: 1 1/4 cups

Ingredients

  • 34 cup  vegetable oil or 34 cup olive oil
  • 13 cup fresh lime juice
  • 12 teaspoon lime zest, grated (colored rind only)
  • 12 cup  packed cilantro, roughly chopped
  • 1  fresh jalapenos or 2  fresh  serranos, stemmed and roughly chopped
  • 1  teaspoon salt

Directions

  1. Combine the oil, lime juice, lime zest, cilantro, chile and a scant teaspoon salt in a blender jar and blend until smooth.
  2. Taste and add more salt if you think it needs it, keeping in mind that dressings should be highly seasoned.
  3. Pour into a jar, secure the lid and refrigerate until ready to use.
