Lime Chicken With Peppers

This is from the official Crock-Pot web site. I liked the mix of ingredients, and since most of the cooking is done in a slow-cooker, it's easy to prepare. Personally, I think the cilantro adds more than just garnish appeal -- it imparts a necessary flavor to the dish! Show more

  1. Combine garlic, broth, 2 Tbsp lime juice, soy sauce, chicken, red onion, and red and green peppers in slow cooker.
  2. Stir to coat chicken.
  3. Cook on low for about 4 hours (depending on how fast your slow cooker cooks).
  4. In a large skillet, melt butter over low heat.
  5. As soon as butter is melted sprinkle in 1/4 cup of flour.
  6. Stir with wire whisk.
  7. Slowly add in whole milk and stir with whisk; it should be pretty thick.
  8. Take your measuring cup and dip it in the slow cooker and get about 1/2 cup of the liquid and pour it into the skillet.
  9. Add in the rest of the flour (another 1/4 cup) and stir.
  10. Get more liquid from slow cooker and add it into creamy mixture
  11. Add in about 2 Tbsp to 1/4 cup of lime juice to the cream mixture (depending on how much you like lime).
  12. Add in the rest of the contents from the slow cooker and stir to combine.
  13. Add in the pasta and coat.
  14. Serve with cilantro for garnish, if desired.
