Lima Bean Soup With Tomato

Ingredients
- 20 ounces baby lima beans, cooked and drained
- 2 tablespoons onions, chopped
- 1⁄4 teaspoon fresh thyme, chopped or 1⁄8 teaspoon dried thyme, crushed
- 1 medium garlic clove, minced
- 2 tablespoons butter
- 14 ounces chicken broth
- 14 ounces beef broth
- 1 cup tomatoes, diced (can be from a can)
Directions
- Mash about 2 cups of the lima beans with a fork and set aside.
- In a saucepan, saute onion, thyme, and garlic in butter until tender, about 5 to 7 minutes. Add mashed lima beans, whole lima beans, broths, and tomato. Simmer a few minutes to heat through and serve.
