Lightning-Fast Wraps - Meat, Spinach, Carrot and Tomato

From Disney's The Magic Kitchen Cookbook. I eat gluten free, but my husband and son don't need to, so this recipe is calling for both types of wrap bread. This is one of the recipes my 9 year old son has made on his cooking night. For gluten free, you can get the wrap bread now (my local grocery store carries them), but you will need to carefully check labels on sour cream dip. Many have modified food starch and hydrolyzed vegetable protein which might contain gluten. You may want to make your own - it is possible to get sour cream that is gluten free, but you have to check the label. You also need to be careful about the deli meats. Show more

Yields: 3 wraps

Ingredients

  • 2  flour tortillas (10 inch tomato-basil or spinach flavor)
  • 1  piece  gluten free bread (ivory teff wrap bread)
  • 6  tablespoons  French onion dip (toasted onion sour cream dip, check for gluten free)
  • 6  slices  deli turkey or 6  slices chicken or 6  slices beef or 6  slices ham
  • 34 cup fresh spinach leaves
  • 38 cup carrot, shredded (measured when shredded)
  • 12  cherry tomatoes, cut in half

Directions

  1. Spread each tortilla or wrap bread with 2 tbsp dip. Top with meat, then spinach, tomato and carrot. Tightly roll up tortillas. Wrap tightly in plastic wrap and chill in refrigerator (up to 2 days).
  2. Cut each into 4 pieces to make pinwheels, if desired.
