Lighter Sausage and Peppers

Serves: 4-6
Ingredients
- 1 lb Italian turkey sausage
- 3 bell peppers, sliced (I like to mix red and green)
- 1 onion, sliced thin
- 1 (14 ounce) can diced tomatoes
- 12 -16 ounces beer (select something you'd drink)
- 2 tablespoons minced garlic
- 1⁄4 teaspoon crushed red pepper flakes
- 1⁄4 teaspoon dried oregano leaves
- salt and pepper
Directions
- spray a large pan with cooking spray and brown the sausage links over medium heat until they are mostly done.
- remove sausage from the pot and set aside for later. When cool, slice diagonally. Drain any excess fat from the pan, if there is any. (Not usually any for me)
- Saute onions and peppers over low-medium heat until they begin to soften. Add garlic and seasonings and saute 1-2 minutes more.
- Add the sausage back to the pan and pour in the beer. Let the mixture simmer until the beer is reduced to about half.
- Add the tomatoes and continue to simmer at least 10-15 minutes, or until the turkey sausage is cooked through.
- serve over brown rice or in sandwiches.
