Lighter Sausage and Peppers

  1. spray a large pan with cooking spray and brown the sausage links over medium heat until they are mostly done.
  2. remove sausage from the pot and set aside for later. When cool, slice diagonally. Drain any excess fat from the pan, if there is any. (Not usually any for me)
  3. Saute onions and peppers over low-medium heat until they begin to soften. Add garlic and seasonings and saute 1-2 minutes more.
  4. Add the sausage back to the pan and pour in the beer. Let the mixture simmer until the beer is reduced to about half.
  5. Add the tomatoes and continue to simmer at least 10-15 minutes, or until the turkey sausage is cooked through.
  6. serve over brown rice or in sandwiches.
