Lighter Macaroni and Cheese Salad

Ingredients
- 1 lb salad macaroni
- 1 small onion, diced
- 6 eggs, hard-boiled and chopped
- 1 (3 7/8ounce) can black olives, sliced, well drained
- 1⁄2 lb mild cheddar cheese, cubed
- 2 cups canola oil mayonnaise
- 2 tablespoons Dijon mustard
Directions
- Boil salad macaroni for 10 minutes.
- Drain and rinse with cold water, place in large mixing bowl.
- Add 1 cup of mayonnaise and mix well.
- Dice onion, chop eggs, cube cheese and drain olives.
- Add to bowl and mix well.
- Add rest of mayonnaise and dijon mustard.
- Mix well and chill.
