Lighter Chocolate Cake

Yields: 1 8" cake layer
Ingredients
- 5 egg whites
- 1⁄2 cup granulated sugar
- 1⁄2 teaspoon vanilla extract
- 1⁄3 cup cake flour (you can use a-p flour)
- 4 tablespoons unsweetened cocoa powder
- 1 1⁄2 teaspoons icing sugar
TOPPING
- 2⁄3 cup Cool Whip
- 1 tablespoon chocolate syrup
Directions
- Preheat oven to 300*. Line bottom of a 8" round cake pan with parchment paper.
- In a medium bowl, beat the egg whites at medium speed until frothy. Slowly beat in the granulated sugar, 1 tablespoon at a time, until soft peaks form. Fold in vanilla.
- Combine flour and 3 tablespoons cocoa powder in a small bowl. Sprinkle over beaten egg whites, half at a time, gently folding in until it is just absorbed.
- Spoon into baking pan and smooth the top. Bake 30 minutes - until top springs back when lightly pressed.
- Sprinkle icing sugar on a clean tea towel. Turn the cake out of the pan onto the towel & peel off the parchment paper. Cool completely.
- TOPPING:.
- Combine Cool Whip and chocolate syrup until blended. Spread over top & sides of cake. Sprinkle with remaining 1 tablespoon cocoa powder.
