Lighter Calorie Pesto

Ingredients
- 4 cups basil
- 5 garlic cloves
- 2 tablespoons parmesan cheese
- 1⁄4 cup pine nuts
- 1⁄8 cup olive oil
- 1⁄8 cup lemon juice
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
Directions
- Toast the pine nuts in a dry skillet. Stir often to prevent burning.
- Place all ingredients in a food processor and chop until smooth. Add cold water one tablespoon at a time if it gets too thick to continue blending.
